The BEST Healthier No-Bake Cookies!

As much as I love baking, sometimes I just want a little something sweet without having to turn on the oven and all that jazz. Plus, if I can make any sweet treat a little healthier and still taste just as great, I’m all for it!

These no-bake cookies are dairy free, refined sugar-free, and can be gluten free as well! They do have a high fat content (coconut oil + peanut butter), but it’s a healthy fat, so feel free to indulge a little bit!

Ingredients

  • 1 cup natural peanut butter (Smucker's natural smooth is my favorite!)

  • ½ cup naturally refined organic coconut oil

  • ½ cup raw honey

  • 2 ¼ cup rolled oats (gluten free, if needed)

  • 6 Tbsp pure cocoa powder

  • 2 tsp pure vanilla

Directions

  1. In a medium saucepan, melt peanut butter, coconut oil, and honey on medium-low heat, stirring continuously until smooth.

  2. Remove pan from heat then add the oats, cocoa powder, and vanilla. Mix together until well combined.

  3. Next, scoop the mixture with a large spoon onto a baking sheet lined with parchment or wax paper. It should make roughly 15 cookies, depending on the size of your scoops.

  4. Place the baking sheet in the fridge for about 45 minutes or until set and enjoy! (You can place them in the freezer for about 15 minutes if you can’t wait!)

  5. Store the remaining cookies (if you have any :) ) in an airtight container in the fridge. The cookies will soften up if left at room temperature, still delicious, but keep a napkin handy!

They are so simple to make and are hands down mine and my husband’s favorite cookies! And honestly taste just as good as regular no-bakes, if not better, you’ll just have to make them and let me know! :)
